Thumbs up Red Snapper throats

Many people aren't aware that Snapper, Grouper, Amberjacks and other fishes have some great eating from the "throats" that are usually discarded. I use serrated scissors to remove them and the Pec fins. I keep the skin/scales attached as this helps retain moisture. I roll them in seasoned cornment/flour mix and deep fry. I also split them down the "keel" bone, not in half on average size fish, just to allow faster cooking. They are some fine eating! badcuda
